The Uncomplicated Guide to Sushi

Never had sushi? No judgement, plenty of love. Here's everything you need to know before your first visit.

Gunkan

Gunkan

The jewel of the menu.

A small base of rice wrapped in a strip of seaweed or a thin slice of the fish itself, forming a little "boat". The top is generously filled with chopped fish, tartares, roe or whatever the chef's creativity allows.

Niguiri

Niguiri

The perfect balance.

A slice of fish or seafood shaped by hand over a delicate base of rice. A great classic of Japanese cuisine, where the ratio of fish to rice is a true art.

Hossomaki

Hossomaki

Traditional and elegant.

The classic thin roll with nori seaweed outside and rice wrapping one or more ingredients inside. Light, simple and full of flavour.

Uramaki

Uramaki

Texture and contrast.

The famous inside-out roll: the rice sits on the outside — usually sprinkled with toasted sesame seeds for crunch — while the seaweed and filling stay protected inside.

Temaki

Temaki

Eaten with your hands.

The iconic seaweed cone generously filled with rice, fish and your choice of ingredients. Made to be enjoyed immediately, while the seaweed is still perfectly crisp.

Sashimi

Sashimi

The pure cut.

Fine, delicate slices of fresh fish — sometimes seared — rigorously selected by the chef. Served without rice: the ideal choice for those who appreciate fish in its noblest, most natural form.

Hot Roll

Hot Roll

The crispy touch.

For a more intense experience: a sushi roll coated in Japanese breadcrumbs (panko) and fried until golden. Crackling outside, warm inside, finished with our artisanal tarê sauce.
